Can I use an standard set of garages like these

I expect so - though I've never used a set of them.
I use a Morgan Carbtune ... like this:

They do a 2-column one too that is cheaper .... but my feeling was that a 4 column gauge would cover 4 cylinder bikes as well as the Falco.
The dial gauges you've found are cheaper but I seem to recall hearing that dial type ones can be harder to damp. Maybe others that have used them can comment - they could be fine.

US market - the trim pots are there but disabled in software. However ..... 54s can be a right PITA.
The issue is getting a perfect fit of the butterflies ..... and if you don't, you'll never achieve a sensible tick over.
I have a set of 54s that I picked up a few years ago and despite having spent a fair bit of time playing about, could never achieve a slow enough tickover. I've removed them and gone back to 51s.
If I do swap again, it'll be for 57s as they are factory standard parts and the butterflies fit well.
Certainly worth swapping if you go big-bore .... and noticeable effect on a standard engine.
