It would be a shame to hack a fairing up if the bars over dont work for you.

You do not need to hack anything Jay, if you are just lifting the bars to try it.
If you just release the ties a bit especially the first one after the bars, the cables/lines should just have enough free play. It's actually a close thing, we just did this on Dave's bike and kept all standard lines OK. Some seem to be a bit tighter and I think Pete changed his brake pipes.
The only other main thing is the front brake master cylinder may have to be moved slightly so it does not catch the fairing on the right hand side, (
you may need to mod or change the bracket), everything else should just clear OK, try it like this and see how you go.
If you want to go to higher bars, (Falcuono), the hacksaw will obviously be needed and bar converters.
I'd try the first setting and wait for the physio results.
Got this sort of problem with Dave since his latest Op, (
left knee replacement, that should have given him 130 degree movement). He initially only got 90 degrees and lots of pain.
After lots of physio he has now got just over a 100 and less pain, but still got no hope of a standard gear change on his Blade, so I suggested an old type rocking gear change.
He's bought and modded one, (
almost all Hondas have the same spline still), and we have it working for him, so will be putting it through the test when the snow goes.
We left the right hand peg adjusted slightly via one of those stepped footpegs, but moved the left peg much further for now and fitted the rocker. Will be odd with the left leg further forwards but it doesn't feel too bad when you sit on it.
Anything to keep him biking, I will be taking it for the MOT next week so see how it goes.
If you need to change the footpeg height, I think you saw Dave's conversion when he had the Falco, it worked well, so things can be done.
It's just a case of making up new alloy plates etc..
