If I was in your position, I too would be looking closely at the America but only if the T100 wasn't suitable. The America would seem to fit the bill better than the Thunderbird IMO.
Have you had a look here? I know the input will be biased but when I had my Sprint I found it to be useful, helpful forum.

Isn't the 1200GS a bike with a very upright position anyway? Will a cruiser really give much benefit ? - maybe even adding other ergonomic issues.

I do appreciate riding with neck issues - although not arthritis, I have some issues with mine and my physiotherapist is suggesting that I should have a more upright bike for long journeys .... though I'm trying to resist
