Iffy temp readings

G'day gents, I've been getting some spurious temperature readings in the last week. Sometimes the bike warms up a little slow then it'll drop back to flashing cold while riding when it's normally reading in the 70's.
Yesterday after a good run and a short stop it flashed cold at me for the last leg of the trip, a short one thankfully as it deffo smelled like it was hot possibly too hot.
I've not had a chance to check the coolant level, but there is no obvious evidence of a leak and the last time I changed the coolant it was properly burped and has been fine for ages.
So whats the thoughts of the unwashed masses (yes I mean you lot)?

Knackered thermostat or temperature sensor, both should be easy enough to diagnose using some hot water (and a multi-meter for the sensor).

OK so thanks Wayno, a mate reckoned the Thermostat might be the problem too.
However I found a knackered sight tube that was leaking.
I've just replaced it with some clear fuel hose (hopefully it'll be ok) oh by the way get something bigger than 6mm as it was damn tight to get on.
So I topped up and started the bike and the temp started to pick up like it should and the thermostat opened around the correct temp just above 60. But the temp climbed slowly and the fans kicked in at 72ish and the temp dropped to 40 then 36, so somethings still wrong.
It's cooling down as I type and hopefully I've got an air lock.
If the temp sensor is buggered (the one on the front cylinder that tells the dash what to say) would that really be a problem as long as the fan switch is working and the rear cylinder sensor is ok?

Fixed.
It was the dash, I had a troll round the internet and found very few problems matched mine, but the ones that were close were fixed with a dash change. I had a spare dash so tried it and it worked. So relatively happy with the outcome, although I've gained 40,000km.
So now I need a new dash for the spare Falco if I ever actually get round to rebuilding it, any out there going begging?

I think I have a spare plus a spare spare ..... I'll have a look (but might not get chance 'till the weekend).
