What is the benefit of fitting a wider tyre?

It's wider.
Wider tyre, same rim = steeper profile.
Other than that, I can't help as I've always used 180s.
BTW a 190 will have an effect on speedo accuracy as the rolling radius will be greater. It will under-read a bit. Just worth being aware as you rumble past those pesky cameras.

If its any help, ive got a 190/55 on my rear.
Michelin Pilot Road 2 - loads of clearance between chain
Doesnt affect speedo as much as you think
Worth the extra couple of quid in my opinion

I fitted a set of Dunlop SportSmarts last year, rear is 190/55 section. The Sportsmarts are a great tyre anyway, but the 190/55 section definitely gives a feeling of more grip when on the power out of a corner. The only downside is that the increased profile height meant it fouled my NWS hugger, whereas a 180/55 section worked fine with it.
The hugger has been removed; the 190/55 has stayed fitted...

I've got Sportsmarts on my Falco, which replaced the Roadsmarts that were on there when I got it.
The Sportsmarts are easily the best tyres I have ever used and are better than the Metzeler Sportec M5s that were fitted to my previous bike (a GSX-R1000 K6). Both are in the PB test.
I've only done one track day on the Falco so far, in May at Snett. The Dunlops were faultless at my pace. Doing Cadwell in a few weeks' time, too.
On a separate note I was surprised at the amount of ground clearance the Falco has. I know it's a tall bike but flipping heck you can get it over so low before anything touches down. Wore my sliders to atoms

it can get low enough to be used as a strimmer..... especially at Mallory Park...
Let's face it, you wouldn't go to a nurse to get good advice on a problem with a Falco - you'd choose an Engineer or a mechanic...
