Looking for a project

I am looking to pick up a motorcycle in need of work.. i.e an insurance salvage or something thats just been sitting in someone's garden. I dont have a huge amount of experience - im probably a good step above average-DIY-Joe but would not call myself a mechanic. I do have motivation, time and patience on my side though, and Im keen to learn as I go.
Anyway, Im looking for something I can ultimately put on a track one day as a track bike, maybe a year 1998+ 600 or 750 like this(http://cgi.ebay.co.uk/ws/eBayISAPI.dll? ... &rd=1&rd=1), or Im looking for something that I can use myself when its done... in this line it would have to be different to the Falco, i.e. a naked or a trailie, like this (http://cgi.ebay.co.uk/ws/eBayISAPI.dll? ... &rd=1&rd=1) or this (http://www.hbc.co.uk/cgi-bin/zyview/D=v ... /R=3247582) - just as examples.
I wont always be able to view the machine, how "safe" is it buying a cat C or D motorcycle? Can there still be frame damage to cat c/d? (The 1200GS seems to have a bent frame and the engine would need to be rebuilt - is this a no-no?) Can anyone recommend other websites/places to see such motorcycles? Or any other advice on such a project?
